Gluten Free Chicken Fajitas Recipe

Now that I’m gluten free Mexican food is my go to option when I go out for dinner because a majority of the meals make use of corn and rice rather than wheat.

Before I was gluten free one of my favorite easy to make meals was chicken or beef fajitas. While the size and structural integrity of corn tortillas does not compare to wheat tortillas, they still taste excellent and are a relatively straightforward meal to cook for a group.

Gluten Free Chicken Fajitas.

Ingredients

  • 1 Whole 1 Bell Pepper

  • 1/2 Whole 1/2 Red Onion

  • 1 tsb 1 Garlic

  • 1 lbs 1 Chicken Thighs

  • 1/2 Whole 1/2 Avocado

  • Chicken Fajita Seasoning

  • Salt

  • Pepper

  • 2 2 Corn Tortillas

  • 1 oz 1 Cheddar Cheese

Directions

  • Slice your red onion and bell pepper into thin slices and place into a frying pan. Sprinkle with salt, pepper, and fajita seasoning and stir periodically. Cook until caramelized and add garlic.
  • Slice your chicken breast into small pieces and season with salt, pepper, and fajita seasoning. Cook chicken in the frying pan until internal temp is 165F.
  • Grate 1oz of cheddar cheese. Butter a frying pan and place your corn tortillas in the pan and flip before adding the cheese and letting them toast until the cheddar cheese is fully melted.
  • Slice up a half an avocado and place on top of the corn tortilla, add seasoned vegetables and add chicken.
  • Enjoy your gluten free fajitas!

Notes

  • White Onions are better for this recipe than red onions but all I had was red so that’s what I used. I would advise purchasing white onions when making any Mexican cuisine.
