Gluten Free Orzo Salad

Gluten free orzo salad is a wonderful side dish to go along with your summer meals. It’s light, refreshing, and best of all gluten free! This dish is relatively easy to make and the recipe can easily be scaled to accommodate large groups.

This dish compliments Mediterranean style chicken, or any fish dish well.

Gluten-free orzo salad is a delicious and refreshing dish made with rice and corn based orzo pasta. Packed with vibrant vegetables like bell peppers, zucchini, and red onions. it’s tossed in a tangy vinaigrette and garnished with fresh herbs. This light and flavorful salad is a perfect choice for those with gluten sensitivities.

Ingredients

  • 1/2 package 1/2 Gluten Free Orzo

  • 2 whole 2 Zucchini

  • 1/4 whole 1/4 Red Onion

  • 1 1 Bell Pepper

  • 1 tbsp 1 Garlic

  • 3 oz 3 Feta Cheese

  • 4 whole 4 Scallions

  • Salt to Taste

  • Pepper to Taste

  • 1/3 cup 1/3 Lemon

  • 1/4 cup 1/4 Olive Oil

  • 1/4 cup 1/4 Red Wine Vinegar

Orzo Salad Directions

  • Chop your zucchini into small pieces, dice your onions, chop your bell pepper into small pieces. Spray your cookie try with olive oil and spread the chopped vegetables. Place in air fryer on 375 for 40 minutes, stirring around the vegetables every 10 to 15 minutes.
  • Boil your gluten free orzo, drain and add to a mixing bowl. Add cooked vegetables, garlic, chopped scallions, and crumbled feta cheese to the bowl. Add Dressing (Recipe Below) and mix.
  • Let The orzo salad sit for for a few hours or over night and serve cold.
  • Dressing Recipe
  • Add 1/4 cup of olive, 1/4 cup red wine vinegar, 1/3 cup fresh squeezed lemon juice, salt, and pepper to a jar.
  • Shake until dressing is homogenous and add to mixing bowl with orzo salad.

Notes

  • I personally don’t like Eggplant but a grilled eggplant would also taste great in this recipe.
  • I forgot to purchase chickpeas but Chickpeas would have been very tasty in this recipe. I highly recommend adding them.
  • I’m also not a fan of tomatoes but they would go well in this orzo salad.
  • I live in Texas so using the oven is out of the question most of the year so I cooked my vegetables in my air fryer. You can use an oven or even grill them in aluminum foil.
  • This Dish is meant to be served cold. I personally prepare it the night before and eat it the next day but a few hours of cooling will do just fine.
  • I personally believe that more veggies you add the better. Don’t feel pressured to follow the quantities to a tee just make sure you scale up the dressing with the more gluten free orzo and veggies you add.
