Gluten Free Spicy Buffalo Chicken Mac & Cheese

As I have stated time and time again mac and cheese is one of my favorite meals and I’m determine to perfect gluten free mac & cheese. This week I made a gluten free spicy buffalo chicken mac & cheese. I really love using Trader Joes Brand Gluten Free Organic Brown Rice Penne Pasta in mac n cheese. It has a great flavor and texture that you just don’t get with corn or chickpea pastas.

Ingredients

  • 1/2 whole 1/2 Red Onion

  • 2 lbs 2 Chicken Thighs

  • 1/2 lbs 1/2 Gluten Free Organic Brown Rice Penne Pasta

  • 1.5 tsp 1.5 Garlic

  • 1/2 cup 1/2 Grated Parmesan

  • 2.5 cups 2.5 Shredded Sharp Cheddar

  • Salt

  • Pepper

  • 1 cup 1 Franks Red Hot

  • 2 tbsp 2 Mule Sauce

  • 3/4 cup 3/4 Chili Sauce

  • Cayenne Pepper

  • Smoked Paprika

  • Cajun Seasoning

  • Extra Virgin Olive Oil

  • 1 tbsp 1 Butter

Directions

  • Finley dice your onion and place in pan coated in olive oil on medium heat. Add salt and pepper to taste.
  • Chop your chicken thighs into small pieces and place into a mixing bowl. Add salt, pepper, franks red hot, mule sauce, chili sauce, cayenne pepper, smoked paprika, and Cajun seasoning. Mix thoroughly until chicken is coated.
  • Add garlic, chicken, and sauce to the onion pan. Turn on medium high heat and cook until the internal temperature of your chicken reaches 165F.
  • Grate cheddar cheese into a bowl and add parmesan.
  • Boil your gluten free penne pasta. Add half of your butter to the bottom of the pot so the pasta doesn’t stick. Add the rest of the butter, cheddar cheese, and parmesan cheese. Mix until cheese is fully melted. Add the onions and chicken and mix thoroughly.
  • Enjoy!

Notes

  • I only had 2 cheeses in my fridge at the time I cooked this meal but the more cheese the merrier. I would suggest adding in at least a pepper jack to better compliment the spice of the buffalo chicken
  • This recipe would also work well with chicken breast or tender. I think this also has potential with chicken nuggets or any spicy breaded chicken.
