Gluten Free Spinach Rice

When your gluten free carb dishes can be a pain in the butt to make because so many carbs aren’t gluten free. Rice is one of my go to options, however, eating plain white rice gets boring quickly. I like to experiment with different types of rice like fried rice, Spanish rice, or pilaf.

This dish goes really well with lemon pepper chicken, gyro, chicken souvlaki, or any other Mediterranean dish. There are a few ways to cook rice but I personally like to do it in the instant pot because it cooks evenly with minimal effort every time. Check out our instantpot rice recipe.

Ingredients

  • 1 1/2 bags 1 1/2 Baby Spinach

  • 1/8 whole 1/8 Red Onion

  • 2 whole 2 Bell Peppers

  • 1 tsp 1 Garlic

  • 1 cup 1 Cooked Rice

  • 2 oz 2 Feta Cheese

  • Salt

  • Pepper

  • Lemon Pepper

Directions

  • Dice 1/8 of a red onion and chop 2 full bell peppers. Spray your frying pan with olive oil and add 1 bag of baby spinach. Add salt to help dehydrate spinach. Once the spinach has cooked down add onions, peppers, and another 1/2 bag of spinach.
  • Season with pepper and lemon pepper.
  • Once the spinach has cooked down add garlic, feta cheese, and 1 cup of rice. Mix thoroughly.
  • Enjoy!

Notes

  • You can use whatever type of feta cheese you want buy my personal favorite that’s easy to get is the organic Kirkland brand feta. If you have a Greek, Armenian, or Mediterranean store in your town you can get fresh feta and that takes the cake.
