Home Made Gluten Free Chickpea Chili Mac & Cheese

One of my favorite ways to eat chili is over mac n cheese. I find that home made mac & cheese has the best results but it also goes great with any boxed or frozen gluten free mac & cheese. This recipe can be made with any type of gluten free pasta you would like. I personally made this recipe with chickpea pasta because it’s high in protein. This recipe can make as many or as few servings as you would like. I personally made only one serving when I was making this recipe. I find it easiest to make the chili in advance and preheat it. Just follow my 5 bean turkey chili recipe.

Ingredients

  • 6 oz 6 Chili

  • 2 oz 2 Cheddar Cheese

  • 2 oz 2 Grated Parmesan Cheese

  • 1/8 box 1/8 Chickpea Rotini

  • 1/4 cup 1/4 Pasta Water

  • Butter

Directions

  • Bring your water to a boil and add your Chickpea Rotini.
  • Heat your pre made chili.
  • Strain your pasta and save some of the pasta water. Pour the pasta back in the pot and add butter to the noodles, dump your cheese into the pot and add pasta water. Mix thoroughly so cheese covered all of the pasta.
  • Add your gluten free mac & cheese to a bowl and add chili.
  • Enjoy!

Notes

  • This Recipe is for one serving but if you scale up the quantity of pasta and cheese you can make it serve as many as you would like.
  • I originally meant to add avocado to this recipe but forgot when I was cooking. I recommend it.
  • You can use whatever type of cheese you want. I personally prefer Vermont Cabot Sharp Cheddar. You can also add a as many types of cheese as you would like.
