Instant Pot Pulled Pork Recipe

I love a nice smoked pulled pork weather I’m slow cooking it on a Big Green Egg at my parents house or going to a local BBQ joint. One of the hardest parts of living in an apartment complex is I can’t own a smoker so it’s very difficult to make BBQ at home.

While I haven’t found a solution for apartment brisket, or ribs yet, I have perfected my Instant Pot Pulled pork recipe. I love pulled pork because it’s a very versatile meal that tastes great on pulled pork nachos, gluten free pulled pork sandwiches, or on its own.

Ingredients

  • 5.5 lbs 5.5 Pork Shoulder

  • Garlic BBQ Dry Rub

  • Smoked Paprika

  • Salt

  • Ground Black Pepper

  • 1.5 cup 1.5 Water

Directions

  • Place your pork shoulder on a large cutting board and trim excess fat before scoring the meat. After you finish scoring, liberally sprinkle salt, pepper, smoked paprika, and garlic BBQ dry rub. Make sure the entire slab of meat is covered in seasoning and that the seasoning gets into all of the cracks.
  • Pour 1.5 cup of water into your instant pot and gently place the pork shoulder in the instant pot. Cook on high for 1.5 hours and let depressurize for 20 minutes.
  • Take pork out of your instant pot and pull.
  • Enjoy!

Notes

  • You can swap a pork shoulder for pork butt. I personally prefer shoulder because it’s less fatty and tends to pull apart more easily when fully cooked.
  • I live in Texas so I personally use Salt Lick BBQ’s Garlic Dry Rub on the pork. I imagine any dry rub would make the pulled pork taste great. I personally am not a fan of using BBQ sauce so for this recipe I would recommend using a dry rub.
  • Cook time will likely change depending on how much pork you plan to pull.
  • I personally just use two forks to pull my pork. You can also purchase a tool that helps you tear it more efficiently which I would suggest if you’re making a very large batch and want it to be particularly shredded.
